@goat bourdain was a treasure.  in so many ways.  never demeaning.  always made whatever shithole he was in feel like the greatest place on the planet to be.  his episode with jim harrison was phenomenal.  bourdain was phenomenal.

@arthur-dent I’ve lived in a lot of states, and always say you can find “the South” in every state.  Illinois is a great example.  I grew up in the southern part, farming community, and it was NOTHING like the northern part.  Spent years in StL, canoed the Current River every Summer, tell me Eminence is not southern! 😎

Bourdain was the chef's chef. You go into any serious kitchen, and ask about famous chef A, B, C, you'll get various answers. I like him. I hate her. I think he's a showboat. She couldn't cook toast if her life depended on it. Various answers. But you ask about Bourdain, and every single person will tell you, He's still in my prayers every night. The man was a legend.

Older cooks still gift Kitchen Confidential to their young apprentices. "You really want to know what this business is like? Read this."

Totally agree about the Greeks.  Back in the day they prepared great yellow perch in The Region and here in Denver they make great enchiladas and burritos.  The Menus are always huge.

@mohoosier my best friend (gummie guy from prior board) and i floated the current with our dads when we were about 8.  our dads were super young and total hoosiers.  as a former stl you know hoosiers.  they got super drunk and floated about three miles down the river from us.  we turned over our canoe and sat on the bank of the river.  for hours and hours and hours until they by foot walked back and found us.

You should really read Kitchen Confidential. That shit is right up your alley. It tells the story of when being a line cook was like being a rock star in your own mind. But it also includes a lot of really good advice about both eating and cooking.

@mcm666  I got meatloaf because of CO's recommendation. And it is down home country cooking, with things like fried chicken and chicken fried steak and veggies covered in bacon (fatback or jowls also allowed as I often was sent to White Star Meat market 4 blocks up the street to get whatever she needed. In the 60s a 5 year old doing that must have been better accepted). And veggies had to be soaked in butter. Lastly all dinners HAD to have desert. 

I wanted to make sure I remembered right so I also bought a cup of sawmill gravy. God what wretched stuff. All it says is cooked with pork drippings, must be ham because it tastes nothing like sausage or bacon gravy. 

Catfish would also be southern. I ate a ton of fried bologna sandwiches growing up because they were cheap, or tomato sandwiches for the same reason. Or the real winner was a sandwich with softened butter in the middle (or margarine if cutting costs even more). 

But meatloaf is as southern as anything.

My mom still tells stories of her dad making her and her brother onion sandwiches--Cut a raw onion in half, put it between two slices of bread, and here you go kid, lunch!

 

As one of 7 kids growing up in a family that was dirt poor, we ate a lot of milk soup with bologna sandwiches.

Yep, Southern Illinois has little in common with the rest of the state. Mom's side of the family was from Randolph County down there along the river. I remember spending alot of time during the summers and holidays down there. TV and radio stations from Cape Girardeau Missouri, Paducah Kentucky and Carbondale Illinois. The space inside that 3 town triangle was as much "the south" as any place I'd been from Indiana to the Gulf Coast.

 


A good friend will bail you out of jail, but your best friend will be sitting next to you in the cell saying "that was f***ing awesome"

McDonald’s started going down hill when they went from 100% outside walk up to  inside sit down.

@co-hoosier damn coh.  i never knew it was walk up only.  wow.  fast food jumped the shark when they started hiring filthy people smoking in front etc; having weed come flying out of the car when they open it, and then walk into work etc.  i don't eat fast food.  above all because of the workers. it wsa yet another area chic fil a excelled compared to chipotle mcdonalds burger king kfc etc
